I’m the wind: strong, impetuous and also soft as a breeze. I’m the bubbles, elegant and full-bodied. I’m the Durella grape, indigenous variey of the Monti Lessini, sparkling wine which referment in the bottle for 60 months. I’m Diletta Tonello, italian vigneron.

WINEMAKING

We pick up the grapes by hand, and after a soft pressing, the wine ferment in steel tank, under controlled temperature. I make the blend during the winter, and the wine ‘sleep’ in the tank until the time of the bottling. For this reserve, the blend is a mix of the best tanks. During the bottling, the wine makes the second fermentation into the bottle, in a controlled temperatu- re, and at the end of it the wine stay with the yeast for 60 months. After the degorgement, the wine ‘sleep’ for minimum three month before the sale.

TASTING NOTES

Color golden yellow; fine and persisten perlage, delicate and creamy mousse. At the nose note of bread crust (yeast), vanilla and matured fruit. Great personally and elegance. Full and persistent in the mouth. Bodied and elegant on the palate, with a lingering bouquet.

PAIRING

White meat, fried fish or grilled fish, shellfish, pasta or vegetable risotto. Gives a special tuoch to any festivity.
